Pasta with pumpkin

INGREDIENTS

  • 800 g Pumpkin without peel
  • 300 g Le gemme del vesuvio candele pasta
  • extra-virgin olive oil to taste
  • 1 garlic  clove
  • q.s. chili pepper
  • q.s. parsley
  • salt to taste
  • q.s. black pepper

PREPARATION

Peel the pumpkin and cut it into cubes. In a thick-bottomed pan, brown the garlic with the extra virgin olive oil and the chilli pepper.

Then add the pumpkin and the chopped fresh parsley and cook for 5 minutes.

Remove the garlic and add 250 ml of water, add the salt and cook over medium heat, and with the lid, for about twenty minutes: until the pumpkin is well cooked. Remember to mix from time to time.
